Coconut Custard Pie

Coconut Custard Pie

If your palate yearns for a dessert that combines the velvety richness of custard with the tropical sweetness of coconut, this Coconut Custard Pie will deliver in the most delightful way. Nestled in a flaky, buttery crust, the silky custard is infused with coconut essence and topped with golden, toasted shreds. Comforting yet exotic, it’s perfect for festive gatherings, potlucks, or simply when you crave a slice of homemade indulgence.

Ingredients

For the Crust

  • 1 pre-made pie crust (store-bought or homemade)

  • Optional: ¼ cup shredded sweetened coconut (to scatter on the base)

For the Custard Filling

  • 3 large eggs

  • 1 can (14 oz) sweetened condensed milk

  • ½ cup whole milk (or coconut milk for deeper flavor)

  • 1 teaspoon vanilla extract

  • 1 teaspoon coconut extract (optional, for extra coconut essence)

  • 1 cup shredded sweetened coconut

For the Topping (optional)

  • Whipped cream or vanilla ice cream, for serving

  • Extra shredded coconut, for garnish

Instructions

1. Prepare the Oven & Crust

Preheat the oven to 350°F (175°C). Press the pie crust into a 9-inch pie dish. For extra flavor, sprinkle shredded coconut over the base before adding the filling.

2. Make the Custard

In a medium bowl, whisk the eggs until smooth. Add the condensed milk, whole (or coconut) milk, vanilla extract, and coconut extract. Whisk until well combined. Fold in the shredded coconut.

3. Assemble

Pour the custard mixture into the prepared crust. Smooth the top and, if desired, sprinkle a little extra coconut over the filling for a toasted finish.

4. Bake

Bake for 40–45 minutes, until the center is set but still slightly wobbly. A knife inserted near the center should come out clean. For a more golden top, broil for 2–3 minutes, keeping a close eye to prevent burning.

5. Cool & Serve

Let the pie cool completely on a wire rack, then refrigerate for at least 2 hours (overnight is best). Serve chilled or at room temperature, with whipped cream, ice cream, or a dusting of toasted coconut.

Final Notes

This Coconut Custard Pie is a beautiful balance of nostalgia and island charm. With its creamy filling, tropical flavor, and melt-in-your-mouth crust, it’s a dessert that brings warmth to the table and a little vacation to every bite.
