Easy Stuffed Pepper Casserole Recipe

This hearty and comforting stuffed pepper casserole is a delicious and easy-to-make meal. It’s perfect for busy weeknights or a cozy weekend dinner.

 

Ingredients:

Ground Beef 1 pound

Bell Peppers, chopped 2

Onion, finely chopped 1

Garlic, minced 3 cloves

Worcestershire Sauce 1 tablespoon

Low-Sodium Beef Broth 15 oz can

Diced Tomatoes 15 oz can

Long-Grain White Rice 1 cup, uncooked

Italian Seasoning 1 tablespoon

Salt 1 teaspoon

Black Pepper ½ teaspoon

Mozzarella Cheese, shredded ¾ cup

Cheddar Cheese, shredded ¾ cup

 

Instructions:

Cook the Ground Beef: Brown the ground beef in a large skillet, breaking it up as it cooks.

Add Vegetables: Add the chopped bell peppers and onion to the skillet and cook until softened.

Add Garlic and Seasonings: Stir in the minced garlic, Worcestershire sauce, beef broth, diced tomatoes, rice, Italian seasoning, salt, and pepper.

Simmer: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender.

Add Cheese: Stir in half of the shredded cheese until melted.

Top with Cheese: Sprinkle the remaining cheese on top.

Melt Cheese: Cover the pan and let the cheese melt. For faster melting, you can place the uncovered pan under the broiler (if oven-safe).

Serve: Serve immediately.
