For the Chicken

For the Veggies

  • 1 lb baby potatoes, halved

  • 1 lb fresh green beans, trimmed

Instructions

  1. Preheat Oven – Set your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease with oil.

  2. Season Chicken – Rub chicken breasts with olive oil, garlic powder, oregano, paprika, salt, and pepper. Set aside.

  3. Prepare Potatoes – In a bowl, toss potatoes with olive oil, garlic powder, thyme, salt, and pepper. Spread them evenly on the baking sheet. Roast for 20 minutes.

  4. Add Chicken & Beans – Remove the sheet from the oven. Push potatoes to one side, place seasoned chicken in the center, and add green beans to the other side. Drizzle beans with a little olive oil, salt, and pepper.

  5. Bake Together – Return to oven and bake 20–25 minutes, until chicken reaches an internal temp of 165°F (75°C) and potatoes are golden.
