What Are Scored Potatoes?

Scored potatoes, also known as Hasselback potatoes, originated in Sweden and are now loved worldwide. The technique involves making thin slices across each potato without cutting all the way through, so the potato fans out beautifully as it bakes. This creates extra surface area for crispiness while keeping the inside fluffy and soft.

Ingredients

  • 4 medium russet potatoes

  • 2 Tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)

Instructions

Step 1 – Prep the Potatoes
Preheat oven to 400°F (200°C). Wash and scrub the potatoes well. Place each potato between two chopsticks and carefully slice thin slits across the potato, about ⅛-inch apart, making sure not to cut all the way through.

Step 2 – Season
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Brush the mixture generously over the potatoes, making sure it seeps into the cuts.

Step 3 – Bake
Place potatoes on a sheet pan lined with parchment paper. Bake for 45–55 minutes, until the edges are crispy and the centers are tender.

Step 4 – Serve
Sprinkle with fresh parsley before serving for a pop of color and freshness.

Variations & Tips

  • Cheesy Twist: Sprinkle grated Parmesan or cheddar halfway through baking for an indulgent finish.

  • Loaded Style: Top with sour cream, bacon bits, and chives after baking.

  • Spicy Kick: Add a dash of smoked paprika or chili powder to the seasoning mix.

  • Butter Upgrade: Replace olive oil with melted butter for extra richness.
