Instructions

1. Activate the yeast
In a mixing bowl, combine lukewarm milk and yeast. Let sit for 5 minutes until foamy.

2. Mix the dough
Add sugar, egg, oil, orange zest, vanilla, and salt. Gradually add flour and mix until a soft dough forms. Knead for 7–10 minutes until smooth and elastic.

3. First rise
Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 2–3 hours or until tripled in size.

4. Shape the donuts
Roll out the dough to ¼ inch thickness. Cut into rounds using a cookie cutter. Place on parchment-lined trays, cover, and let rise again for 1 hour.

5. Fry
Heat oil to 340–350°F (170–175°C). Fry donuts for 2–3 minutes per side until golden. Drain briefly, then roll in granulated sugar.

6. Fill
Once slightly cooled, use a piping bag to fill each donut with your choice of cream or jam.
