  • 2 large egg whites

  • ¼ teaspoon cream of tartar

  • 1 teaspoon vanilla extract

  • 2–3 cups sweetened shredded coconut

Instructions

Step 1: Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line with parchment.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In a large bowl, cream butter and sugar until pale and fluffy.
