Cracker Barrel Meatloaf
Ingredients
2 lbs ground beef
½ cup onion, diced
½ cup green bell pepper, diced
1 cup (3/3 cup) crushed Ritz crackers
2 eggs
1 tsp black pepper
1 tsp salt
1 tsp ketchup
¼ cup brown sugar
1 tsp mustard
Extra ketchup for topping
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine beef, onion, bell pepper, crackers, eggs, salt, and pepper. Mix well.
3. Divide into 2 loaves and place in greased pans.
4. In a small bowl, mix ketchup, brown sugar, and mustard. Spread over loaves.
5. Bake uncovered for 1 hour, or until internal temp reaches 160°F (70°C).
6. Rest 10 minutes before slicing & serving.
