Smoked Sausage and Potato Bake

2½ lbs baby creamer potatoes, halved

1½ lbs beef smoked sausage, sliced into 1-inch pieces

1 large yellow onion, diced

1 green bell pepper, diced

2 Tbsp olive oil

2 tsp Slap Ya Mama seasoning (or your favorite Cajun seasoning)

1 tsp garlic powder

1 tsp black pepper

1 tsp red pepper flakes (optional, for heat)

4 Tbsp butter, cubed

Instructions
Step 1 – Prep the Oven and Pan
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray and set aside.
Step 2 – Season the Potatoes
In a large bowl, toss potatoes with olive oil. Sprinkle in Cajun seasoning, garlic powder, black pepper, and (if using) red pepper flakes. Toss well to coat.
Step 3 – Add Sausage and Veggies
Add sliced smoked sausage, diced onion, and bell pepper. Toss until evenly combined.
Step 4 – Transfer and Top with Butter
Spread mixture into the prepared baking dish. Dot the top with cubed butter, spacing pieces evenly.
Step 5 – Bake Covered
Cover tightly with foil and bake for 30 minutes.
Step 6 – Uncover and Bake Again
Remove foil and bake for an additional 15–20 minutes, until potatoes are fork-tender and edges are golden and crisp.
Step 7 – Rest and Serve
Let the bake rest for 5 minutes before serving. This allows flavors to settle and makes it easier to scoop.
